Basics on Grilling Ribeye Steaks
Have a hot grill, whether charcoal or gas.
If your fire is very hot, plan on 4 minutes each side. If it is less hot, plan on 5 to 6 minutes, then 4 minutes after turning
A rare ribeye will feel soft; as it cooks it will get more firm.
Err on the side of under-cooking as ribeye steaks will cook quickly.
When drops of juices appear on the surface, the meat is medium, so if you see these, act quickly.
Cut a small slit with a small sharp knife to check the doneness.
Avoid flare-ups, especially after the steaks are well seared.
Use a steak thermometer to check the temperature. Remember that the temperature will increase 5 degrees or so after removal from the grill.
125 to 135 Rare; 135 to 145 Medium Rare; 145 to 150 Medium; 155 Well Done.
